Beans are a great nutrition booster! They are very versatile and economical too! Beans are a great source of folate, iron, protein, fiber, and zinc. According to a recent article in the "American Journal of Clinical Nutrition" beans are a nutrition superstar because they:
- Reduce cholesterol levels
- Decrease risks for heart disease and diabetes
- Improve colon health
This recipe combines beans with squash and corn (which Native Americans call the "Three Sisters") for a very flavorful soup. Enjoy! Dried Pinto Beans
6 cups chicken broth1 clove garlic, minced½ cup chopped onion½ cup chopped tomatoes½ cup peeled, diced potatoes½ cup thinly sliced yellow squash½ cup whole kernel cornSeason to your taste with: salt, pepper, cilantro,
oregano
Soak beans overnight. Rinse well and drain. Place beans in large soup pot with broth and garlic. Simmer 30 minutes, stirring occasionally. Add other ingredients and cook until all vegetables are tender. Add additional broth and/or water to your desired consistency. Serve with cornbread.
