Pasta can be a staple at many meals. Did you know there are over 600 types of pasta? Pasta is an excellent source of carbohydrates and can be combined with a protein choice or vegetables to make really satisfying dishes.
As for pasta storage, it does have a shelf-life and for best quality it will last up to two years if stored tightly sealed in a cool, dry place.
Bow Tie & Spinach Salad
2 cups uncooked bow tie pasta
6 cups fresh baby spinach (about 6 ounces)
2 cups fresh broccoli florets
2 tomatoes, chopped
1 medium sweet red pepper, chopped
½ cup cubed part-skim mozzarella cheese
¼ cup minced fresh basil
1/3 cup sun-dried tomato dressing
¼ teaspoon salt
¼ cup toasted almond slices, optional
Cook pasta according to package directions. Drain; transfer to a large bowl.
Add all other ingredients, except salt and almonds; tossing well to combine.
Drizzle with dressing and sprinkle with salt and almonds; toss to coat. Yield: 6 servings.
** With pasta salad, it’s easy to change up ingredients. You could also add grilled chicken or beef to this recipe.
